Chicken Cordon Bleu

 Ingredients

2 Cups Hook to Cook Poultry Coating

4 slices Swiss Cheese

½ Cup Hook to Cook Pre-Dip *

4 slices Bacon, cooked

1 Cup Water

Oil for frying

4 skinless, Boneless Chicken Breasts

Toothpicks

4 slices Ham

 

 Instructions

  1. Pre-heat oven to 350° F. 
  2. Make a small slit in the end of the chicken breast and using a sharp knife make a pocket inside the breast.
  3. Place a slice of Swiss cheese and bacon on top of the ham.  Roll it lengthwise and put it into the pocket of the chicken breast.  Secure the opening with a toothpick.  Set aside.
  4. Place flour in a medium bowl.  Coat each chicken breast with the flour.
  5. In a shallow dish, mix the Pre-Dip with the water using a whisk to blend until smooth.  Dip the stuffed chicken breasts into the Pre-Dip, coating evenly.
  6. In a medium size bowl add the Hook to Cook coating and coat chicken on all sides.
  7. Fry the chicken breasts in the heated oil until golden brown.  Place on an oven proof platter and cook uncovered in 350° F oven for 25 minutes.
  8. Top with Hollandaise sauce, add fresh lemon juice to taste, and garnish with parsley of cilantro.
