
COCONUT SHRIMP
(serves 4)
INGREDIENTS
2 Cups Hook to Cook Coconut Coating
½ Cup Hook to Cook Pre-Dip *
1 Cup water
1 Cup flour
Un-Cooked Shrimp, peeled and de-veined
Cooking Oil
METHOD
Place flour in medium size paper bag. Add several pieces of shrimp at a time and shake to coat. Shake off excess flour. Place on plate. Continue until all shrimp are coated.
In shallow dish, mix pre-Dip with water using a whisk until smooth. Coat each piece with Pre-Dip, making sure all dry surfaces are coated.
In another medium size bowl add the Hook to Cook Coconut Coating and coat each shrimp evenly.
When all are coated, heat oil and fry until golden brown. Serve immediately with your favorite plum sauce.
