Stuffed Chicken Breasts Printable version
(serves 4)
INGREDIENTS
2 Cups Hook to Cook Poultry Coating
½ Cup Hook to Cook Pre-Dip*
1 Cup water
4 skinless, boneless chicken breasts
1 pkg. Stove Top Stuffing-Chicken Flavor
1 Cup gorgonzola cheese
Oil for frying
Toothpicks
Pre-heat oven to 350 degrees
METHOD
Make a small slit in the end of the chicken breast and using a sharp knife make a pocket inside the breast.
Prepare the stove top stuffing according to package directions. Mix the gorgonzola cheese into the prepared stuffing and spoon the stuffing mixture into the uncooked chicken breast until the pocket is full. Secure the opening with a toothpick. Set aside.
Place flour in a medium bowl. Coat each chicken breast with the flour.
In a shallow dish mix the Pre-Dip with the water using a whisk to blend until smooth. Dip the stuffed chicken breasts into the Pre-Dip, coating evenly.
In a medium size bowl add the Hook to Cook Coating and coat chicken on all sides. Fry the chicken breasts in the heated oil until golden brown. Place on an oven proof platter and cook uncovered in 350 degree oven for 25 minutes.
Hollandaise sauce is a nice complement to this dish.
*Hook to Cook Pre-Dip when mixed as directed makes a superior adhesion batter forming an intermediate binding layer that produces a healthier entrée by preventing oil/fat absorption. Pre-Dip also seals in juices/moisture and nutrients, increases adhesion, crispness and prevents blow off during frying. Pre-Dip will also help food stay crisp longer when kept warm or on the table, and with its superb blend of flour and spice will enhance the flavors of any additional coatings giving you the results of a professional chef. Pre-Dip is highly recommended to be used with all Hook to Cook Premium Coatings. |
