Stuffed Chicken Breasts      Printable version

(serves 4) 

INGREDIENTS

2 Cups Hook to Cook Light & Crispy Coating

1 Cup Hook to Cook Pre-Dip*

Water

4 skinless, boneless chicken breasts

1 pkg. Stove Top Stuffing-Chicken Flavor

1 Cup gorgonzola cheese

Oil for frying

Toothpicks

Pre-heat oven to 350 degrees 

METHOD

Make a small slit in the end of the chicken breast and using a sharp knife make a pocket inside the breast. 

Prepare the stove top stuffing according to package directions. Mix the gorgonzola cheese into the prepared stuffing and spoon the stuffing mixture into the uncooked chicken breast until the pocket is full. Secure the opening with a toothpick.  Set aside. 

Place ½ cup Pre-Dip in a medium bowl.  Coat each chicken breast with the Pre-Dip. 

In a shallow dish mix the remaining Pre-Dip with water using a whisk to blend until smooth. Dip the stuffed chicken breasts into the Pre-Dip, coating evenly. 

In a medium size bowl add the Hook to Cook Light & Crispy Coating and coat chicken on all sides.   Fry the chicken breasts in the 350° heated oil until golden brown.  Place on an oven proof platter and cook uncovered in 350 degree oven for 25 minutes.  

Hollandaise sauce is a nice complement to this dish.
